Formula: Add about 4 250g loafs (about 1kg of wet powder)
- 200g pre-mixed powder
- 400g white flour
- 6.5g salt
- 6.5g instant yeast
- 400g of water
How to do:
- knead the mixture at slow speed for 2 minutes and then speed up in 8 minutes
- Then incubate the powder for 15 minutes
- Divide the dough into small parts 200-500g
- Let the dough rest for 15 minutes and then shape
- Continue to incubate the powder for 90 minutes (best temperature 35 degrees C, humidity 75%)
- Bake 200-230 degrees in 20-25 minutes
